I have always preferred hot sandwiches over the cold ones but being a vegetarian , I am usually left with the only choice of having a cheese and tomato panini when at a cafe. Paninis can be quite versatile especially if you put ingredients of your choice , be it veg or non-veg. This is my idea of How I would like to eat my panini.
Zuchinni- sliced length wise thinly Roasted peppers in oil- drained (or u can grill sweet peppers too with zucchini!)
Green pesto-2 tsp
mozarella cheese/ philly cheese (or whatever in stock)
Dried or fresh basil
salt and pepper
Method: 1. Slice the zucchini (and peppers,if using), sprinkle salt ,pepper and some olive oil, grill each side for 4-5 min 2.Slice open the panini and smear the pesto, top it with grilled zucchini, roasted peppers, basil and cheese. 3.Place it on panini press and sit back and enjoy. Anything tastes good in a panini so let your imagination go wild. My kids love to have it with sweetcorn or sausage!
