Easy bhindi sambhariya


I was inspired by Tarla Dalal's recipe of bhindi sambhariya and tried making it. It was very tasty but very time consuming  especially stuffing each bhindi after carefully slitting them. If you are patient enough and used to making stuffed bhindi then you can follow that recipe. Here is the shortcut version.
Ingredients:
1/4 kg tender okra/bhindi
1 tbsp oil
1/4 tsp hing/asafoetida
few curry leaves (optional)
ForSambhariya:
1 1/2 tsps ginger green chili paste
1/2 tbsp roasted coriander pwd
1 tsp roasted cumin powder
pinch garam masala powder
1/2 tbsp white sesame seeds
3-4 tbsps fresh coriander leaves, finely chopped
3 tbsps fresh coconut, grated
2 tsps brown sugar or jaggery or white sugar
2 tbsps coarsely powdered peanuts
1/2 tbsp oil
lemon juice-1 tbsp
salt to taste
Method:
1. Chop the okra/bhindi into small pieces or use frozen cut bhindi.
2. In oil ,add hing and curry leaves and saute the okra for 4-5 minium flame till it stars browning lightly.
3. Now add the sambhariya ingredients , mix for few min ang keep it in the lowest flame for about 10 min, stirring in between. Do not cover.
4. Serve it with chappathi or phulkas.
