Carrot rice


This is one of my favourite rice for my packed lunch coz its very flavourful and full of texture yet not spicy . Grating the carrot is the only tedious part otherwise its easy and bursting with natural flavours.
Ingredients:
carrot-2 cups,grated
cooked rice-from 1 cup
onion-1, sliced
greenchilli-3, slit
Tadka-oil, 1 tsp mustard seeds, 1 tsp jeera, 2 tsp urad dal, few curry leaves
salt
Method:
1.In liitle oil, add tadka ingredients and green chillies.
2. Add the onions, saute till pink and soft. Add the carrots and salt.
3. Stir 4-5 min, add the cooked rice. Mix it well and serve.
