I had this for breakfast today and was blown away. Its a keeper indeed. I had some garlic pickled in balsamic vinegar ,red chillis, sugar with rosemary sprig in the fridge which came in handy.
Philadelphia cheese- to spread
Garlic -1 clove
1. Warm the bruschetta or ciabatta in the oven. Meanwhile assemble the other ingredients.
2. Rub the warm bread with garlic if you dont have pickled one or use garlic & herb philly cheese.
3.Spread the philly cheese. Arrange the onion and tomatoes. Add a few teaspoon of balsamic vinegar.Top it with basil and serve.
It could be served as an elegant appetiser when serve open on bruschetta or can be closed as in ciabatta if taking it for packed lunch.
