Mexican rice

I have been working over the weekend so the weekend shopping did not get done. So I came up with this recipe with the ingredients in my pantry. Next time you have a mexican themed meal, follow this recipe for rice and get ready to recieve the compliments. I am not sure if this is how the authentic mexican rice is prepared but I think they ought to be making it this way ;).
Onion-2, chopped
Tomato-2, chopped
Garlic clove-2, minced
Green chillis-2, chopped
Salsa-half cup
Fajita seasoning-1tbsp
Mixed bean salad-1can
Stock cube-1

 1.First soak rice in plenty of water and keep it aside.
2.In a pan, take little oil and add chopped onion, garlic and green chillis and saute till light brown.
3.Add chopped tomatoes and stir for 2 minutes and then add the fajita seasoning, salsa and drainec mixed bean salad. keep the drained liquid from the bean salad aside to be used for cooking later.Mix for 2 minutes.

4.Wash and drain the rice and add it to the above and stir for a few minutes.
5.Take 3 cups of hot water, add the stock cube to it and the drained liquid from tne mixed bean salad and add it to the rice. Add salt.Let it all boil and then simmer till all the water is absorbed.
Serve it hot garnished with coriander leaves. This can also be used as a burrito filling.
