It was mid week, after coming back from work I wanted something nice and easy with veggies in my fridge.
I love aubergine and for the rest of the family I add potatoes. Its ready in no time and when I took it for lunch next day at work, I found a few nurses drooling over it when I took it out of microwave.
Aubergine-1 large, chopped chunkily
Potato-1 large, chopped chunkily
Tava fry masala- 2-3 tbsp
Coriander leaves- for garnishing
1. In a non-stick wok, in little oil add the chopped aubergine/brinjal , potatoes and salt. Cook on low covered stirring now and then till its almost done.
2. Add the tava fry masala and mix well. Let it simmer for 5 more minutes till its well blended. Garnish with chopped coriander leaves.
Serve it with warm roti or chappathi.
