This is a very easy and colourful Mexican dish which can be adapted to each one's individual taste. It can be a very interesting first course. For non-vegetarians, you could just keep some cooked chicken strips separately which could be added to the filling.
Green, Red, Yellow pepper-1 each, julienned
Onion-1, thinly sliced
Green chillis-2, chopped fine
Coriander leaves-2 tbsp
Spices-1 tsp pepper powder, 1tsp paprika, 1tsp cumin powder (or 1 packet fajita seasoning)
To serve-Chopped lettuce, cherry tomatoes, sour cream
1. In little oil, saute onions and green chillis till they turn soft and pink.
2. Next add the sweet peppers and saute till its cooked but still crunchy.
3.Add salt and spices and mix it well. Lastly add the coriander leaves.
4. To serve, warm a tortilla spoon 1-2 tbsp of the above filling. add some lettuce and cherry tomatoes and little sour cream and enjoy immediately.
