Greek Pasta Salad

This recipe is from a Greek gourmet cookbook given to me by Ilias. It is full of flavour and texture. You could add trimmed salami  and kasseri cheese which tastes similar to parmesan, if you prefer. If you cannot find kasseri then could add chunks of mozarella or parmesan.
Fusilli-450 gms
EV Olive oil-4-6 tbsp
Onion-1 large, finely chopped
Garlic-2 cloves, minced
Capers-2 tbsp
Olives-3 tbsp, chopped, green/black/mixed
Cherry tomatoes-8, chopped in half
Sundried tomatoes-8, chopped
Oregano-2 tbsp
Salt and pepper
Salami and kasseri cheese-1.5 cup each (optional)
1. Cook pasta in salted water. Drain and toss it with 2tbsp olive oil.
2. Saute onion and garlic in 2 tbsp olive oil untill soft, about 7 min on medium heat.
3.In a large bowl, combine pasta with sauteed onion and garlic, capers, olives, tomatoes, pepper , salami, cheese and oregano.
4. Add a little olive oil and toss. Serve hot or warm
