I had made Redmi/Aloo paratha this morning for lunch, so decided to try sandwich with the potato filling, which I can take as packed lunch. I must admitt it tasted much better than aloo paratha due to the additional ingredients.
soft cheese/butter-to prevent bread getting soggy
Mint -coriander chutney
cucumber, tomato slices,onion rings-optional
Potato filling- 4 large potatoes, boiled and mashed without lumps
1 bunch finely chopped coriander leaves
Green chilli-4, finely chopped
lemon juice- 1 lemon
garam masala-half tsp
1. Smear soft cheese or butter on both slices.
2.On one slice smear a heaped tsp of mint-coriander chutney. On the other slice smear a heaped tbsp of potato filling.
3.Top it with cucumber /tomato slices for texture. Sandwich them and grill them on both sides in a panini press. Serve with ketchup and mint chutney.
This potato filling is quite versatile,it can also be used for making stuffed paratha , bread rolls or aloo tikkis.
