I followed the same principle of Gajar Halwa and made pumpkin halwa. Since the tedious part is peeling and grating so to avoid that I steamed the pumpkin and then it was easy to peel and grate.
Pumpkin- 5 cup
Condensed milk-1 can, 400gms
Cardamom powder-half tsp
cashewnuts- half cup
1.Steam or pressure cook big chunks of pumpkin for 1 whistle. It will be alot easier to peel and grate.
2. In a tbsp of ghee, add the cashewnuts when it changes colour add the grated pumpkin and fry it for 4-5 min.
3. Add the condensd milk and stir intemittently untill all the moisture evaporats and it looks semi dry. If you like it more sweet then can add sugar and mix for few more minutes.
4. Lastly add the cardamom powdr and serve it warm or cold as a dessert.
