This is a Lebanese recipe and the first time I made it a couple of years ago for friends, they just presumed that I made up this name was trying to trick them. This is a quite filling salad and could be a meal in itself if you are dieting.
Cucumber-1, chopped small
Sweet pepper-1, diced
Onion-1 , sliced
Tomatoes-3, chopped (I used baby plum tomatoes)
Mint leaves - handful, chopped
Parsley- handful, chopped
Dressing- 3-6 tbsp olive oil, 2tbsp lemon juice, 1tsp cumin powder, 1 clove garlic crushed
Salt and pepper
Feta cheese- for garnishing
1.Cut the pitta bread in bitesize pieces and cook for 8 minutes in a preheated oven at 190C.
2. While pitta is getting crisp, combine the ingredients for dressing and give it a shake.
3. Chop all the salad ingredients, add the dressing. Mix in the pitta bread.
4. Season it with salt and pepper and serve it topped with crumbled feta.
