Easy Carrot/Gajar halwa


When I was about 9 years old I had my glasses and since then not only my mom but our neighbour, Deshpande aunty used to  feed me gajar ka halwa almost everyday to improve my eyesight. Well, my eyesight did not improve but I certainly enjoyed Deshpande aunty's gajar ka halwa which she used to make adding khoya and using red carrots. I must admitt this instant gajar ka halwa tasted the same and brought back memories. The tedious part is grating carrot but if using a food processor then its effortless.

Ingredients:
  • carrot-1 kg, grated
  • condensed milk-1tin of 400gms
  • cardamom powder-1/2 tsp
  • ghee-3 tblsp
  • cashew-1/4 cup

Method:
1. Heat ghee in a non stick wok or pressure cooker, add cashew and fry till it turns brownish.
 2.Then add the grated carrot and fry for 2 minutes then close the lid and cook for 5-7 minutes,first on high and then on slow flame. The raw smell would have gone and you could smell a nice aroma.
3.Next add the condensed milk and keep stirring till it becomes semi dry which takes about 10-15 minutes.

4.Lastly add cardamon powder and serve warm either on its own or with icecream.
I honestly sympathise with people who spend hours trying to evaporate the moisture from milk and carrots. This is a must try method for gajar ka halwa.
Tip:you can add half cup extra condensed milk if you want to make it more sweet.
