Despite living in Gujarat for 25 years I had not heard about this vada. Recently I had this vada and was very impressed by it. It tasted good when cold too. Ami, who lives in Surat gave me this recipe for it.
Wheat Flour-1 cup
Jowar Flour-1 cup
Ginger-green chilli paste- 2"ginger, 5 green chillis
Spices- 1/2 tsp turmeric, 1 tsp chilli powder, 1 tsp asafoetida, 1 tsp methi power (freshly roasted and ground)
Warm Water- to make thick batter
Oil- For frying
1. In a bowl combine all the ingredients except oil and eno/soda bicarb to make a thick batter.
2. Leave it in a warm place to ferment overnight.
3. Next day , just before frying add eno/soda bicarb an take small portion with your fingers and deep fry till golden brown
