I had the best mixed vegetable made by Aparna and since then I have been following her recipe. It is a perfect side dish for chappathi or roti which looks and tastes great.
Vegetables- 1 cauliflower, carrot ,potato, peas , beans, capsicum etc
garlic paste -2tsp
cumin seeds-1 tsp
spices- 2 tsp coriander powder, 1 tsp chilli powder, 1/4 tsp turmeric,1/4 tsp garam masala
coriander leaves-for garnishing
1. In oil, fry the cauliflower florets till it starts browning, drain and keep aside.
2.In the same oil add cumin seeds and when it splutters add onion,carrot , capsicum and poatatoes and stir till it is nicely roasted and potatoes are almost cooked, about 15 min.
3.Now add the garlic paste and stir for 2 min and add the chopped tomato. Mix.
4. Add the spices and salt according to your taste and mix well.
5. Add the cauliflower and peas and mix and simmer for 5-10 min.
6. Garnish with coriander leaves and serve it hot with chappathi.
You can use this as a filling for grilled sandwich or veg fajita.
