Egg Curry


I was writing about egg bhurji and realised that many have asked me for this recipe on egg curry. This is probably kerala style....I think, coz of coconut milk. This is the first curry I learnt to make and usually served with egg fried rice. Hopefully, my kids (or their spouses) might find this blog useful oneday.
Boiled eggs-5
Onion -2
green chilli-3
Tomato-3
ginger garlic paste-1 tsp
coriander powder-2 tsp
chilli powder-1 tsp
garam masala-half tsp
salt
saunf-1 tsp
oil--little
coconut milk-1 can (u can cheat with ordinary milk as well.....either people dont notice or they have been polite!)
Method:
1. In a saucepan, add oil and then saunf....then onions, chillis,sautee
2. when light brown,add ginger garlic paste,fry for 2 min
3.Add the spices,fry for 30 sec and add tomatoes,chopped ofcourse
4. cook it for 10-15 min ,add salt
5. add coconut milk and switch off when heated thru.....if its too thick(or want to increase the quantity) then add boiled water
6. Add the boiled egg cut in hlf and garnish with corinader leaves
