This reminds me of the aloo-puri,I used have on my long train journeys from Ahmedabad to Kerala. One day my mother in law made the same and it's been a family favorite since then.
Fresh Ginger -1inch
Tadka-oil,mustard seeds,urad dal 2tsp,curry leaves
1.peel and cut the potatoes in cubes and cook on stove or microwave with a cup of water and some salt.
2. Meanwhile chop onions,greenchilli and Ginger into small pieces.
3.lightly mash the potatoes with a fork once cooked.don't drain the water.
4.in a wok add tadka,then chopped onions,chilli and Ginger,cook till onions turn pink and soft not brown. 5.add in the potatoes.mix it till you get the preferred consistency, I like it mushy
6.Serve with puri or chapathi,if u r watching calories......recipe of nan.
